Job Summary:
The Food & Beverage Manager assists the General Manager in all aspects across all food and beverage units (7), including a restaurant, banquets/catering, and all concession locations. Management of operations including food, beverage, equipment, and property to facilitate the fulfillment of service standards, financial goals, regulatory expectations and company initiatives. In addition, the Food & Beverage Manager assists in cultivating a team environment that provides exceptional customer service while ensuring all staff members perform at a consistently high level. The Food & Beverage Manager also works towards motivating employees, instilling accountability, and achieving results to drive success in their position.
Job Description:
ESSENTIAL FUNCTIONS
- Receive direction from the General Manager with planning and developing daily operations; forecasting and analyzing sales, labor, and profit; and, ensuring compliance with established budget; and scheduling, supervising, and participating in the operational duties specific to the units.
- Assist in recruiting, supervising, training, scheduling, disciplining, reviewing, and directing the unit\'s staff.
- Maintain accounting records, daily reporting requirement, and cash control. Assist in managing P&L statements for all operations.
- Be present and visible throughout high guest contact and service areas to maintain compliance with company standards and evaluate the consistent delivery of hospitality.
- Manage, Anticipate & Respond (delegate) to customer inquiries and resolve customer needs with professionalism and empathy.
- Partner with the Executive Chef and culinary team to ensure efficient kitchen operations, timely food preparation and delivery, and exceptional quality.
- Maintain and ensure safe facility environment including standards for maintenance and upkeep of unit\'s equipment, food production and handling, cooking, housekeeping, sanitation, dress, cash control, and employee hygiene. Notify General Manager of all unusual events, circumstances, or other safety or quality control issues.
- Always represent the company in a professional and positive manner and enhance the company's image when interacting with clients, guests, associates, and vendors.
- Perform oversight of units opening and /or closing procedures.
- Evaluate potential areas of inefficiency; work collaboratively to develop and implement cost saving procedures and process for all F&B units.
- Conduct routine inspections of the property/F&B operations in its entirety to identify improvement areas or areas needing attention.
- Lead the creation of Menu(s) for all F&B outlets with review of product sourcing, food cost analysis and recipe creation. Seasonal Menus for the restaurant must be completed and implemented a minimum of 3 cycles per year.
- Oversight of all F&B Inventory controls for each of the operations.
SKILL AND KNOWLEDGE REQUIREMENTS INCLUDE
- High School Diploma or GED required. Bachelor\'s or Business Degree preferred.
- At least 4 years of experience in related management level required.
- Food Safety Certified and/or Tips Certification a plus.
- Strong knowledge of FOH service, BOH culinary programs and Bar operations.
- Demonstrated talent for interacting with a wide variety of people.
- Ability to effectively organize and coordinate multiple priorities; ability to work well as a team leader; ability to problem-solve.
- Strong customer service abilities; actively looks for ways to assist customers and coworkers.
- Ability to work a flexible schedule including days, late nights, weekends and holidays.
- Understanding standard commercial cooking machinery, equipment and utensils (refrigeration, fryers, stove, ovens, among others).
- Exceptional communication, organization and time management skills.
PHYSICAL AND MENTAL REQUIREMENTS
- Moving about on foot to accomplish tasks, particularly frequent movements from place to place between the unit. Bend, lift, carry, reach/extend arms and hands above shoulder height frequently, or otherwise move in a constantly changing environment.
- Lifting, carrying, and pushing up to 25 lbs. regularly, 30-35 lbs. frequently, and up to 50 lbs. occasionally.
- Ability to stand for the entire workday and to climb steps regularly.
- Withstanding temperature extremes in freezer, refrigerator walk-in and grill areas.
- Reading and writing work-related documents in English.
- Speech recognition and clarity, including the ability to understand the speech of customers and co-workers and the ability to speak clearly so that you can be understood by customers and co-workers in English.
- Constantly communicates and receives verbal communication with other employees in fast-paced environment.
- Physical presence at the job site is essential to perform job duties.
